Hi Forumotion!
I had a couple questions regarding administration. First off, is there a way to make a co-administrator in the sense, that he has access to the admin panel, but only to certain features? Also, is there a way to get a log of everything said co-administrator has done?
I would like to elect a new co-administrator on the forums to help when I am not around, but I also would like the full control as founder of the forum I have created. If that makes sense.

This is not possible, but it's suggested. You can find topic in suggestions - diffrent levels for admin panel, and vote yes.
Good luck and welcome to forumotion...

Non-founder administrators can see all the administration panel, except for certain things that only the founder can see, like the forum deletion option.

Administration Panel > General > Forum > Security
There are two tabs that are logs of administrators and moderators actions.
