How can I edit someone's post count or delete some post counts?

You can't edit someone's post count. You can hide it for everyone if you want:

Administration Panel -> Users & Groups -> Profiles -> Posts -> Display this field for users that are at least => Admin.

The only other thing you can do is remove people's posts which then obviously modify their post count. Since this topic is solved I'll move it to the archives.
