Has the style "Onyx" been deleted? I went to select it but it is no longer there. Sad

No it is still there.

The page where you create a new forum does not show all of the themes. Once you create your forum, you will find in the Admin Panel, in the Styles tab is choose a theme. You will find Onyx as well as others that were not listed in that page you linked.
