Okay one of my moderators has deleted too many topics. Is there any way to get them back?

Backing up your forum does do posts but it has large portions of time to change back time to, so you would loose lots which have posted in the meanwhile.
Tell your mod to put them in trash, not delete them.

I have told them all to just lock threads and not delete them but they won't listen. Think I have to make a few changes in staff.
