Administration Panel > Users & Usergroups > Group Administration
Modify the ones you want change.

is there a code to change all of them automatically? Doing each one individually seems like a hassle... and I don't want new members to appear blue before I'm able to go in my group administration to change their colors.. (if i even can change normal member's colors in group administration)

Neutral
I just want to change the default user color

The blue color is caused by the GROUP default color. To change it, just follow what SLGray said, go to Administration Panel > Users & Usergroups > Group Administration:
- Group Members Color: (Change it to hex value you want)

Now, for members, they have different color ofcourse since they're not in the "Moderators" group. So if you want to change it, go to Administration Panel > Users & Usergroups > Group Administration > Create new group:
- Group Name: Members
- Group Moderator: (Add your forum name on it)
- Group Members Colors: (Put your desire hex value you want for members)
- Color Group Members: (Check it)
- Group Auto-Subscribe: (Set to Yes)
- Minimum Posts: (Set to 0)

So people on your forum with 0 post will be automatically subscribe to the "Members" group and will have the same color you set on the group.

The Moderator color can be achieved via the ACP, so too should the Member's colors, but even I've had Issues with changing the color of Members.

To change the Member's colors, navigate to theACP > Display > Colors > CSS Stylesheet, and add this code anywhere at the top or bottom:

Code:
a[href*="/u"] {
color: #000000 !important;
}

Change the color code to your preference.
