You don't need to delete the template itself, instead just "Disable" the option to have the D.O.B on everyones 'Profile'

Where would I disable that? I have searched and the only referance to DOB is to make it obligatory. Which I don't have enabled.
The kids enjoy having their birthdays show in the forum, however I don't like the year showing (thus their ages) I consider this dangerous

Remove the 'Obligatory' option then and then just do not fill in the Age Field..
This is the only answer I can find for you as I am looking and annot find a place to disable the Age itself.
Possibly by deleting the template for it, that may work.
