Customized tags (New Update) Empty Customized tags (New Update)

Hi
Maybe this is a stupid or already answered question but here it goes:

I did not understand the aim of the "adding additional customized tags (instead of meta tags only)" in the new update. Could someone kindly explain how to use that feature.. ? And more important: What is exactly that new tool?
