How do I add a 'mood profile' to my members profiles. Where they can choose what image to display beneath thier avatar. ...

Also in your admin panel the personalized profiles are explained very clearly:

You create a new personalized field, you give a name... and select an image out of a list of images... you add the images of your moods and thats all

is there an option to choose more than 1?

im looking to add blinkies, and let admin choose which member has which blinkies (if that makes sense). can only seem to choose 1 blinkie in this way, and it shows on EVERY members profile, rather than a specific one.

There is no option to choose more than 1.
If you want admin to choose, when you fill in the details, Who can modify this field...say admins

Create one more of such personalized profile field then, if you want two to appear.
