Is there a way to disable users from being able to delete their own posts?

Yes, there is.
You go into your ACP, go into Edit Categories and Forums (General)
You click on the Advanced Permissions, and you un-check "Delete Own Posts"
Ofcourse Moderators will be able to because of the ability of Moderation (If you enable it)
