Is there a way that I can set the posts to appear with the most recent, unread one at the top, and then to continue downwards towards the last one posted??

ACP>Modules>Forum widgets Management>Existing Widget>Then find " Recent Topics" .

Place it in Forum to be viewed b y users!

Yes you can order your topics/posts like so when you edit the forums.
ACP > General > Forums & Categories > Edit the ones you want to make like that. There is an option saying something like 'Order topics by'
