I am the Founder of the forum and Administrator. Is it possible for me to be displayed as a moderator or simple member while maintaining founder and Admin rights?

How will that effect the other Administrators who I'd like displayed as such? It's only me that wants to display myself as a regular member.

Yes, it will affect the other administrators. Then the order of the groups would be.
1. Administrator[New Group][ Includes the other admins]
2. Moderator [Includes you]
3. Administrator [Original + Hidden group] [includes you as well as the other admins]
To change the order, you just have to click on modify corresponding to the group & change the order.

I follow you. When I create the new Admin Group how do I give it actual admin permissions like the original?
Also, do I need to remove myself as Group moderator for all groups so I'm displayed as a member?

You want to be a member or a moderator? First post said, you wanted to be a moderator.
The new admin group you will create is just a dummy group, so that other admins get that color. They will also remain in the original hidden admin group as i mentioned.
