You can either remove an admin/moderator by clicking on the group on your forum or on the admin panel. If you do it by the usergroup, just click on the square beside their name on the right and then click on "remove selected." Doing it through the admin panel is the same process. The member will lose their admin or moderator abilities, but still will be a member.
If you have removed them from the group they shouldn't be able to see the staff forum any longer. Although if they still see the forum, you can make a group named after them and prevent them from seeing it.
