When you edit a post it says edited by...... at ....... 1 time is there a way to get this to not show up when you edit a post?

No, I think you can't hide that.

This cannot be removed, even under the use of CSS and Template editing.

A regular user will not get that message if they edit the post before any replies.
That is the only time it doesn't show.

Can you stop members editing their own posts, I thought I saw an option to remove it, but cant find it now?

You can change the permissions for each forum.
Go to General> categories and forums>forums permissions control>
click on the forum you want to modify and untick "edit its own messages"> save

If you want to change the amount of time that a post can be edited after posting:
go to General > messages and email>Message edition duration limit for a member : modify how you like.
