Is there any way of editing a single user's post count? For instance, adding ten posts to their post count?

Alternatively, is there any way of setting up automatic ranks based on the points system? For example, there is already a ranking system for posts where if a user achieves a certain number of posts, they automatically rank up. Is this possible with the points system instead?

You can't edit users' post number. And there's no ranking system based upon the points system but you can suggest that feature in the Suggestion section.
