Member deletion
If I delete a member from my forum will all the posts he/she posted disappear or stay in the forum?

the posts of the deleted member will stay but they will appear as a guest posts then.

yes, thats actually simplier than it may sound and pretty intuitive to setup.
pruning users: when you click that you first generate a list of users that match your criteria. for example like below:
this first step will just generate the list. the next step you can do
further options depending on what you have choosen. sending an email,
deactivating or deleting the accounts selected.
Auto-Pruning at forums does automatically remove old or abandoned
topics where noone posts at. you can set the time somewhere in the
forum-management.

if you want to ditch the user, and not lose the posts and it not show as a post from a guest, just change the users username and password, and email, lol

You can enable the auto-pruning feature for forums. To do that, go in your ACP to the section "Forum / Management" and choose the forum you wish (dont know if that would work for categories as well, but i guess not). Anyway, if you further scroll down you will see as in the screenshot below:
And from here on its pretty self-explanatory. This forum will automatically remove those topics in which nothing has been posted for 90 or more days. the forum will check that every 7 days. =)
