Where or how do I turn on/off the forums read option? Is there even that feature?
My members can't tell what forums they have posted in or even if they have looked at the threads.

Nope, you cannot turn that feature off. Besides it is useful.

Myself and my members can't tell what forums they have posted in unless it's the last post and is under the "last post by" area of the index..

You could press the View your posts button on the top of the index to see where you have posted.

Probably you have assigned the same images for both unread and read topics? Check out the "Display / Pics Management / Icons for topic (forum)" and edit your images there.
