you can't, moderating a forum includes viewing IP addresses

Incorrect.

That is possible; You can remove the IP button, however im pretty sure there is another way.

This is simple.

Admin Panel >> Display >> Pics management >> Advanced Mode >> Buttons >> Hide the IP button
