How do you change permissions for a member on multiple catagories quickly, I dont want to do each catagory at a time

Its not possible. You will have to do it one by one.

Just had someone tell me on another forum theyve joined my forum Hes my guinea pig, sorry volunteer what should happen now to I get an email saying there is a member

Then where do I go in to change the catagory permissions

You cannot change category permissions. You have to do it in each forum of the category
General>Categories and forums
Click on any forum name
Permissions tab.

You can make your job easier by using Copy Forum permissions..
