Hello,
You can not directly remove the forum  statistics link, however, you can limit/ put restrictions on who can view it/them.
To do this go to ACP-->General-->Statistics-->Forum Statistics, who can view the forum statistics, select what you want and save.
As for the contact one I am personally not sure.
