how do i make my subtopics vanish so when you are viewing the forums your only viewing the main topics? can i make this a choosable option for normal users?

If you mean like forums in forums, just go to Display => Structure and hierarchy => Split categories on index => Medium.

It could probably be added to the user profile/preferences if enough people wanted it. It might be possible to write a script to do it in a customized profile. I'm not familiar with forumotion to say definitely one way or the other.
