That reason is hard to explain, but Admins can see everything, no matter what.

The Admin can see everything except the members ...password. This is never shown in the profile.

Everything but not their password. That is always confidential for security reasons.

You cannot even see your own password as the Admin.

The administrator sees everything on the forums, this includes emails addresses.

The admin needs to know the email of that user to contact them via email, send out NewsLetters to that user, and etc.

Email isn't really "private" information. Most people give that information out.. or they make/use another email account if they don't want to use their "private" one.

As said many times above, the administrator has to be able to see the e-mail address of all members, for numerous reasons.

Don't worry too much about personal information getting out, only administrators can see the email addresses, not even the moderators, unless of course the member puts their email address in his/her profile.
