The only things that you can take away from a single member are:
Can send Private Messages, Can display avatar, and Can send attachments.
You could create a hidden group for a single member and remove the permissions from the group in the forums.

Apes Help File
You can make it so only staff can edit posts or you can set a time limit on the edit button so the members have say 15 mins to edit there post then it gets lockedThis can be done by doing in the following..
Step 1
ACP >>
General >>
Messages and e-mails
Configuration >>
Post edit duration limit for a member : SET YOUR OWN TIME LIMIT
SAVE
step 2
As for stopping members from deleteing there post this can be done in your
Forum
Categories and forums >>
Forum Permissions Control >> Advanced Mode Delete its own messages and attachments PICK YOUR MEMBERS OR STAFF THAT CAN DO THIS
SAVE
Hope this is what you was looking for and it was of help to you

Thanks you two, I don't want to remove everyone's right to edit posts, but creating a new group for the specific members is a god idea.
