Restricting Ability of Users to Edit and Delete Posts/Topics
This should be something easy to solve, but it evades me as an Admin (forum creator): how can I edit the ability of other user from modifying (editing/deleting) my posts and topics?
That is, I want to change the permission or ability of any given user so that my posts and topics cannot be edited by that user; in the case of my Moderators, I want some of them to be able to delete or edit posts or topics of members but not my posts or topics.

You can modify permissions for a category from the A.P.. I am not sure if there is an ability that doesn't allow a moderator to edit the messages of all users in his personal category that moderates.
In other words, you can modify their permissions (not to edit) in specific categories and not for all forum)

You can edit the permissions of a forum here :
Administration panel > General > Forum > Categories and forums > click the button to edit a forums permissions
There you can go advanced by clicked the 'Advanced mode' link.
You can then modify the editing and deletion permissions for members and groups.
However, if a user is a moderator of that forum, they will be able to edit / delete posts regardless. Also note that you would have to apply this to each forum.

Also if you do not trust a member in a group with moderation privileges, it would be best not to have them in such a group. Only allow users to moderate forums who you trust.

Of course, I have been very careful in my selection process. I just wasn't aware of limitations on permissions.
One sub-question: I noticed that the forum permissions go along the lines of "edit its own posts"/"delete its own posts" -- what about the posts/topics of other users? Maybe I'm not reading it as its intended.

If you allow a group/member to moderate that forum they will be allowed to edit both their messages and others.
For the options I mentioned above, if the user is not a moderator they will be unable to edit their messages as well as others if it is unticked.
So to put it simple :
Moderator : Can edit/delete posts regardless
Member(perms modified) : Cannot edit/delete posts

Thanks again, that sums it up well
I've posted to my "Senior Moderators" and "Moderators" that deleting posts or topics for ranks of Moderator or higher is not allowed even if the permission technically exists -- that way I can better see/evaluate higher post content.
(Someone had edited one of my posts to be funny, and while it wasn't an important post it got my attention LOL)

You're welcome, Having guidelines of when it's acceptable to delete and edit posts for moderators would be a good way since you cannot modify moderation privileges.
